No Bake Tangy Lemon Slice

I love a real tangy lemony slice... If you do you ul love this recipe!

Ingredients
300g condensed milk
200g butter
400g granita biscuits (i use 1 pack choc wheat biscuits and 1 pack arrowroot biscuits)
2 cups coconut
2 lemon rinds, finely grated

Icing
4 cups icing sugar
80g butter, softened
2 lemon juices + lemon juice/concentrate in a bottle (usually always have one in my fridge)

1/ On medium heat, place butter and condensed milk in saucepan and stir until butter melts.

2/ Process biscuits in a food processor (or crumb them up by hand).

3/ Combine biscuit crumbs, coconut and lemon rind in a bowl and add hot butter mix. Combine well.

4/ Spray a large slice tin and line with baking paper and press base into the tin. Refrigerate 2hrs.

Icing
1/ Place icing sugar, butter and lemon juice from 2 lemons in a bowl and beat until smooth. Add the bottled lemon juice until achieved the right amount of tang ;-).

2/ Pour over the set base and sprinkle with extra coconut if desired, put back in fridge until icing is set.



Salt and Pepper Squid

This is my husbands recipe. Enjoy!

Ingredients
500g Squid ring (chopped into calamari size pieces)
1/2 cup flour
1 Egg
1/4 cup milk
200g breadcrumbs
2 tsp salt
1tsp white pepper
1tsp cracked pepper
Vegetable oil for frying

Preheat oven to 150*

1/ Lightly dust calamari with flour, shaking off any access. 

2/ In a bowl combine egg and milk, whisk. 

3/ In another bowl combine the breadcrumbs, salt and pepper.

4/ Dip the calamari into the egg/milk mix, then into the breadcrumb mix, then onto a plate.

5/ When batch is done put the plate in the fridge for 20 mins or so for the batter to stick.

6/ After 20mins, heat oil in saucepan and deep fry calamari in batches until golden brown. Dry on paper towel and keep warm in oven until the whole lot is complete.

Bacon & Egg Pie

Ingredients
8 Slices of bread - crusts removed and flattened with rolling pin
250g diced bacon
1 Small onion
4 Eggs whisked
4 Eggs (for on top)
1 cup cheese

Preheat oven 180*

1/ Arrange bread, slightly overlapping each other in a greased pie dish.

2/ Fry bacon and onion. Put aside. 

3/ Spread 1/2 the bacon mix over the base, pour whisked eggs over bacon. 

4/ Crack the whole eggs on top, then sprinkle with the rest of the bacon mix, then the cheese.

5/ Bake for 20mins.

Spinach and Cheese Roll

This easy one was given to me by a good friend! It's easy, yummy and full of green goodness!

Ingredients
200g Diced bacon or ham
1 onion diced
1 Cup grated cheese
1 Packet of frozen spinach, thawed (by packet instructions) and all water squeezed out
1 Egg
1 Puff pastry sheet

Preheat oven to 180*

1/ Fry the bacon and onion.

2/ In a bowl, mix all ingredients together (except the puff pastry of course).

3/ In the middle of the puff pastry sheet lay the mixed ingredients in a log in the middle of the sheet. Roll up and seal with a touch of milk or water. Poke holes on top with a fork.

4/ Pop onto a greased oven tray and put in oven for approx 30mins or until golden brown.

Easy Peasy Cupcakes

Makes 12

Ingredients
160g SR Flour
300ml Condensed milk
1 Egg
90g softened butter
1tsp Vanilla essence

1/ Preheat oven 180C

2/ Put all ingredients into a bowl, beat with an electric mixer for two minutes until pale and fluffy.

3/ Line a patty cake tin with patty papers. Even scoop mixture across each and bake for 12 minutes until light golden brown.

Buttercream Icing

Easy basic icing for any cake!

Ingredients
185g butter, softened
2 1/4 cups icing sugar
3tbls cocoa powder (if making vanilla icing replace with 2tsp vanilla essence - may need a little extra icing sugar until right consistency)
2 tablespoons milk
Place all in a bowl and cream with a blender until thick and creamy. 
Easy!

Chocolate Ganache Icing

Rich and creamy, chocolate can be substituted for white or dark or whatever you prefer....

Ingredients
200g cooking chocolate, coarsely chopped 
300g sour cream

1/ Place chocolate and sour cream in a metal bowl over a saucepan of simmering water (make sure the bowl doesn't touch the water). 
2/ Stir with a metal spoon until the mixture is smooth. 
3/ Place in the fridge for 40 minutes to chill before using.

* If making a layers cake and using in-between layers, double the mixture!

Moist White Cake

This is almost a white mud cake texture. I love my cakes moist and dense... let me know your review :-)

Ingredients 
1 cup milk (or buttermilk) 
2 tsp baking soda
2 tsp white vinegar

5 egg whites 
2 1/4 teaspoons vanilla

3 cups plain flour
2 cups white sugar
2 tblsp baking powder
3/4 teaspoon salt

3/4 cup oil

1 cup boiling water


1/ Preheat oven to 175* (160* fan forced).

2/ Spray your cake tin with oil spray.

3/ In a measuring jug combine the milk and vinegar. Allow to sit for a minute and then add the baking soda.

4/ In a medium bowl lightly combine the egg whites, 1/4 cup of the soured milk mixture and the vanilla.

5/ In a large mixing bowl, combine the dry ingredients.

6/ Add the oil and remaining 3/4 cup soured milk mixture to the dry ingredients. Mix on low speed until  ingredients are moistened. Increase to medium speed and beat for 2 minutes to aerate.

7/ Scrape down the sides and add 1/3 of the egg mixture, beating for 20 seconds to incorporate. Continue in the same method twice more until all the egg mixture has been incorporated.

8/ Add the boiling water. Scrape down the sides of the bowl. Beat on low to incorporate then increase to high for 30 seconds.

9/ Pour in to the prepared pan.

10/ Bake for 35 minutes or so.
