Rich Chocolate Mousse YUMMO!

This mousse is sooooooo good! Everyone loves and raves about it.

Ingredients
300g chocolate
3 eggs
1/4 cup sugar
300ml cream plus extra to whip for on top ;-)

1/ Melt the chocolate in a metal bowl, on top of a saucepan of boiling water (so we don't burn the chocolate). Leave to the side to cool.

2/ Beat the eggs and sugar together until thick and pale and doubled in volume (approx 5 mins).

3/ Fold the chocolate into the egg mix (be careful not to let all the air out)

4/ Whip 300ml cream in a separate bowl until thick and fold into the chocolate mix.

5/ Put into your serving bowls (i use wine glasses???) and put in fridge to set. 

6/ When set whip some cream and put on top and then decorate with your imagination.. strawberries, chocolate drizzle, chocolate flakes...


For those who don't have chocolate in the cupboard (it doesn't last long in my cupboard) then you can substitute the chocolate with - 10tbs cocoa, 5tbs butter and 6tbs icing sugar (melt the butter and mix with the cocoa and icing sugar.) But this doesn't taste quite the same ;-)
