Summer is just around the corner and
nothing beats a cool mango sorbet on a warm night! Make sure you make
this one the day before or in the morning...
Ingredients
3/4 cup sugar
2 cups water
4 mangoes, peeled and cut off seed
1 egg white
1/ Put sugar and water into saucepan over a low heat stirring occasionally until dissolved. Increase heat to high and bring to the boil. Cook without stirring for 5 mins. Set aside to cool.

2/ Process mango until smooth. Mix the mango mix into the sugar and water (keep it in the stainless steel pot) then put into the freezer for 2hrs, stirring occasionally.
3/ Beat the egg white until peaks form and fold into mango mixture. Re-freeze until just frozen and put into an ice creamer (or beat until thick and creamy) and re-freeze for 3hrs before enjoying.
